Ingredients for 2 portions:
Dry ingredients:
- 200g of pasta
- ½ can of chickpeas
- 1 1/5 tbsp of tahini paste
Fresh ingredients:
- ⅓ can of cashew cream
- 1 ½ cup of spinach
To flavour:
- 1 garlic clove
- ¼ lemon juice
- a bit of lemon zest
- ½ cup of parsley
Tools:
- 1 pan
- 1 pot
- 1 food processor
Make sure to have some tahini prepared, if you don’t have one handy, here you can find our recipe.
The recipe
- Fry the chickpeas together with 1 garlic clove in some oil to have a decent garlic taste as a base for our hummus-“sauce”.
- At the same time, bring the pasta water to boil, add some salt once its boiling and cook the pasta until short before al dente. (Please save some pasta water – approx. 1/8 cup – for later)
- While the pasta is boiling, prepare your hummus: Add 1 1/2 tbsp of tahini, the chickpeas-garlic mix, some lemon juice, and parsley (put some on the side to garnish later). Put the hummus on the side.
- Fry the spinach in a pan, once fried, and add the hummus mix into.
- To make the sauce a bit more creamy, add some of plant-based cream such as cashew.
- Add salt and pepper, as you like.
- Add the pasta water, that you’ve saved before, into the pan, and bring it to boil. For the last 30 seconds add the drained pasta in the pan and mix it well.
To serve:
Add the pasta on a plate. Garnish it with some thinly cut parsley. If you want, add some chili flakes on top. Enjoy and Bon Appetite! 🙂
